I always approve relevant comments ;)

What I think is either:

symlink() function is disabled in your php installation (this is something only your host can fix, sorry)

the folder is NOT deleted. Check via ftp and make sure to do a refresh.

Every host is (slightly?) different. So far the above technique was reported to work on several of them like Site5, etc.
